Hi all,
About to log out for the time being, had another interesting day with you all,
before I go, anyone got a good recipe for vegetable curry??

Curry ...Well, I have a few recipes that I will be bring with me. They all came from Indian friends.
Potato Curry
4-6 potato's chubed (small)
2 t - Garam Masala
2 t - Ginger powder
1 t - Ginger paste
(you can sub real ginger of course)
1.5 t - Corriander powder
1 t - red chili powder
1.5 t - Tumeric
1 can diced tomatoes (or fresh chopped tomatoes)
1 onion diced
plain yogurt
In pan, heat oil, add onions and tomatoes. Sautee till tender. Add spices and salt and pepper if you like. Mix well, add diced potatoes and water. Cook till tender. When done, add 2-3 large spoons of yogurt and summer. Add chopped cilantro if you like.
Vegetable Curry
Cauliflower
potatoes - 2 medium (cubed)
tomatoes - 1 can or 2 diced
peas - 1/2 to 1 cup depending on how much you want
onion - 1 small diced
cilantro - garnish
ginger paste or fresh - 1 t
minced garlic - 1 t
tumeric powder - 1/2 t
salt
red chili powder 1/2 t
oil
Heat oil, fry onion till brown, add tomatoes, tumeric, red chili, salt, ginger and garlic. Cook for 10 min on low heat. Add cauliflower, potato, peas with 1/2 cup of water. Cook on low heat till done. Garlish with Cilantro.

if u want good indian or ...if u want good indian or pakistani dishes buy a masala product called shan(available at lulu and familyfoods). they have a variety if veges, lentils,chicken and meat recipes which are easy to follow and delicious. they even have masalas for fried egg!!!!!

I usually only use about 2 teaspoons and add non-heat spices for flavor. Including ginger and garlic which is a must in any curry.
One dish that is exciting is paneer and peas. Just skin a few tomatoes and add them to fried onion. Add ground cumin (zeera), tsp. of red chili powder, mashed garlic and ginger, and some coriander powder. Then add the paneer and peas until you can see the oil in the sauce. So delicious you'll never look back.
Alternatively you can try this dish with aubergines and cinnamon sticks, lentil and courgettes, and, if you dare, kerela.

I also eat hot food as well. But shan masala is never used by Indians using the reccommended quantity.
you know you can get bowel cancer from eating it that hot sister.. It happened to my father in law.

Hey brandy go easy on the ...Hey brandy go easy on the spices... most europeans find Indian food very spicy/hot. Where ever they've told to put red chilly powder use half the quantity. PH's recipe shud be ok but use a li'll less chilly powder.
